In the field of the biotechnological production processes ethanol can be considered as an end product or an undesired metabolite. In the fermentative production of alcoholic beverages or in the scope of the production of alternative fuels, so-called biofuels, ethanol is a desired end product. In the latter case one aim IS to achieve the highest possible yield of ethanol (space-time yield). Among the examples where ethanol is an undesired metabolite are the production of baker‘s yeast and particularly the production of proteinogenic substances and pharmacological agents using yeast expression systems.
