In keeping with the motto "Better Life with Chemistry" we will present you here some exciting recipes from the molecular kitchen to create your own G.I.T. Laboratory Ice cream after a long day at work.
Do the experiments yourself - and with different ingredients- just create your own kind of ice cream!
G.I.T. Chocolate Ice Cream:
0,75 liter of whole milk 3.5%
1 liter of cream 30%
3 yolks (fresh!!!!)
2 packages of instant pudding mix
2 packages of vanilla sugar
800 g chocolate chips, best plain chocolate
In a pot, combine 0,5 l of whole milk and 250 ml of cream, and boil it up. Prepare the instant pudding mix as described by the manufacturer and stir it in the heated milk/cream mix. Then add the yolk. After putting this mixture into a metal bowl, add the rest of the cream and the milk, the vanilla sugar as well as half of the chocolate chips, and then let it cool down.
While stirring vigorously add liquid nitrogen until the liquid thickens. Include the rest of the chocolate chips, while gradually stir in the liquid nitrogen, until the ice cream reaches desired consistency.
G.I.T. Strawberry Ice Cream:
500 g fresh strawberries
0,6 liter of cream 30%
50-100 g of sugar (depending on how sweet the strawberries are)
2 packages of vanilla sugar
2 packages of instant pudding mix
about 200 ml of strawberry sauce or strawberry jam
Wash the strawberries, remove stems, cut the fruits into cubes and sugar them. Then wait for the mixture to steep for ½ h in a metal bowl. If that is not fast enough, heat the mixture up in a pot.
Add 400 ml of cream and vanilla sugar to the strawberries and crush the fruits. Add the rest of the cream and season it with the strawberry jam. Then proceed with the liquid nitrogen as described before...delicious!
Please note the safety regulations while handling liquid nitrogen!
